Description
Mandi is a traditional Arabic dish best known by the people of Hadramout province, Eastern Yemen and the people of Al Baha area southwest of Saudi Arabia. It is widespread in some parts of the Arabian peninsula and various Arab countries such as Jordan, Egypt, Syria, Palestine, and all of the Arab Gulf countries.
The traditional way of preparing Mandi is to ignite firewood inside the barrel. When it is transformed into embers, meat is placed inside the barrel above the embers, of course with the presence of a metal basket or wrapping the food with tin foil. Then the barrel is closed tight. Sand or dirt are put on the cover. This is done to maintain the intense heat that will cook the meat.
